Easter Dove Shaped Bread Marks a Flaming End to Lent in Florence Italy

No one, but no one, celebrate Easter like the citizens of Florence, Italy.

In a tradition that's centuries old, teams of white oxen, bedecked in flowers (after all, the word Florence literally means the “City of Flowers”) draw a massive and mysterious 30 foot wooden structure, which is over 500 years old, through the cobblestone streets.

This Easter tradition honors Pazzino de’ Pazzi, who in 1097 was the first soldier to scale the walls of Jerusalem during the First Crusade. (Hopefully in more modern times, we will be more mature as citizens of a mutually shared planet and not hurl rocks and stones at each other.) 

But in 1097, Pazzino was climbing the Holy City’s walls and was later given three fire-striking flint stones from the Church of the Holy Sepulchre as a reward for his achievement, which considering their source, made them holy relics in the 11th  century.

Being a citizen of Florence, Pazzino placed the newly acquired relics, on returning to his beloved City State, in the care of the Church, what has honored them ever since on Easter morning.

Then as now, when the tall antique tower reaches the Piazza del Duomo, a Mass Pasqua will have just been completed. With its arrival, the real fun begins in what the Florentines call the Festival of Scoppio del Carro.

A long fuse wire will have been attached from the Duomo's high altar to the elaborate wooden tower outside. A dove, symbolizing the hope for peace and harmony, is then ignited at the altar and, with fire and sparkles, shoots down the length of the Cathedral towards the outside tower.

The flaming dove then flies into the tower, which is affectionately called “the cart” by the Florentines, to the delight of thousands gathered outside. Inside the wooden structure are hidden fireworks, which then ignite and shoot off to the cheers of the citizens, Everyone is grateful that the dietary limitations of the Lenten season are finally over as the flaming dove flies back to the Cathedral altar.

And how do the Florentine citizens celebrate their new freedom to dine without restraints? Why, with a slice of Florence's famed Colomba dove shaped Colomba bread.

And while many might say, this legendary loaf is only vaguely bird-shaped, the Florentines might reply,

"Don't worry. Life, like the flaming dove of the Cathedral, shoots by all too quickly. The outlines of one’s life don't matter all that much - as long as we have the courage to truly savor the elegant contents of both the loaf and life itself!"

New Pope's Favorite Drink Tells His Life Story

The crowds gathered in St Peter's Square in Rome were amazing when Vatican officials announced on Monday that the new pope would be, wait for it, an Argentinean.

Yes, that's right, an Argentinean - not an Italian, not even a European! Shock and surprise. So who is this man?

He is Jorge Bergoglio, the very different Cardinal of Buenos Aires. To begin with he speaks Spanish as a first language and is also a trained biologist.

But the differences go far further than that for this ascendant to the throne of Peter. Bergoglio is a Jesuit with a lifelong dedication to the poor and his whole lifestyle, including diet, is an indication of that commitment.

He has for many years lived in, not a palatial palace, but a midsized apartment in downtown Buenos Aires with another elderly priest. There he has cooked his own meals, crafting them from fruits and vegetables purchased at local markets with only an occasionally accent of meat for flavor. (What amazing dietary discipline in the land known for its fabulous and very large stakes).

After dinner he was known to often stroll on the streets of the Capital pausing to talk and listen to the needs, not of the high and the mighty, but of the everyday person. He never hesitated to enjoy what they enjoyed and that included a gourd of yerba mate, Argentina's national drink.

And therein lies a tale for mate is also known throughout South America as "Jesuit Tea". During the 1600s and 1700s the Jesuits established many missions throughout Paraguay and Argentina. In addition to sharing European skills with the local indigenous people, the Jesuits also simultaneously protected them from enslavement by the nearby Portuguese. 

While working together, the Jesuits and the free native population were able to cultivate the tea-like wild mate plant. Soon this new-world produce was competing with the English and Dutch marketed tea and producing significant revenue to support the Jesuit missions. 

In 1750 all this, however, came to a stop. The Treaty of Madrid, as captured in the film, The Mission, redrew the map of South America to satisfy the wishes of the rich and powerful.

This redistricting forced many of the once free native people under Spanish rule into Portuguese territories and into slaveryThe Jesuits protested such an injustice while the native people could only flee back into the jungle and so sense of safety.

Without care, the mate producing farms were soon overgrown and absorbed back into the tangled undergrowth leaving no trace of the renaissance between cultures that might have been.

The new pope is surely aware of this tragic struggle between obedience to authority and unalienable human rights because he has chosen "Francis" ("Francisco" in Italian) as his papal name.

St. Francis himself, as shown in the film, Brothers Sun, Sister Moon, struggled with this same conflict. Born into wealth and comfort, he came to understand that nothing can be rebuilt by exclusion, by indifference.

Like Francis, this new Pope is a man of simplicity, entering a world of marble palaces and rigid hierarchy. He is being called upon to address such vast issues as the ever widening child-abuse scandal and possible money laundering by the Vatican bank as well as the needs of the poor and the demand for universal womens' rights.

Pope Francis has in the past preferred public transportation over riding in a limousine, carried his own luggage, bought his own groceries and even danced the tango when he was younger.

Like St. Francis, he will find himself in need of that humility if he is to decline the seductive trappings of papal glory and remember the value a gourd of yerba mate drunk with the very people that Christ himself called, "My Brothers and Sisters".

Eggs in Purgatory May Offer a Valuable Ecumenical Lesson to the Vatican

Roman Catholic Cardinals are now meeting in Italy to begin selecting a new pope. This esteemed group of gentlemen, for there is not a woman among them, will face many unsolved problems in the Church.

Chief among the difficult issues facing the next Holy Father will be the sexual abuse of children by priests, the noncompliance of the Vatican Bank with international monetary regulations, the stabilization of relationships with Islamic spiritual leaders, the recognition of women’s universal rights as well as massive internal security leaks to name only a few of the troubling topics.

It is the hope of many that the Cardinals’ papal choice will open the windows of the Vatican to the 21st Century, embracing as a result, both change and diversity – just like the Italian dish “Uova al Purgatorio”, also known as “Eggs in Purgatory”.

The heritage of this dish begins in Spain and North Africa where both Moorish and Jewish cooks called the dish “shakahouka”.

These innovative kitchen masters were among the first in the Old World to adopt the tomatoes, paprika, and chili peppers brought back from the New World by Spanish explorers. They also quickly added the eggplant -- which was brought from India by Portuguese merchants.

But sadly, many other individuals did not share their creativity, their ability to accept the new and explore its possible applications. Indeed, many felt that these new foods, all of which are contained in “Eggs in Purgatory”, were “vulgar and rustic” foods – unworthy of the upper classes.

As a result, these new culinary delights were enjoyed only by the lower classes, into which both Jews and Arabs had been forced by royal degrees as early as the 16th century in both Spain and Italy.

Yet slowly over time tastes changed. By 1891 the Italian Pellegrino Artusi wrote, “Forty years ago, one hardly saw a tomato, an eggplant or fennel in the markets of Florence. They were once considered vile and foreign.”

Thankfully things have changed as proven by such now popular dishes as “Eggs in Purgatory.” Let us hope that the red robed Princes of the Church are not lost in a ‘purgatory’ of their own creation, frozen in tradition, unable to see the new ’ingredients’ offered by the 21st Century – a century crying for change and ready for a broader, richer, more inclusive spiritual menu.

Where Will the Pope Live and His Guests Go to Dine After Resignation?

The world was shocked and very surprised when Pope Benedict XVI announced yesterday he is “retiring” from his duties as head of the Roman Catholic Church and leaving the Vatican. No pope has taken such an action in nearly 700 years – and then only in times of great conflict.

Among the many, many questions that such a decision rises is where will a living Pope reside (not to mention what will his title be). Currently Benedict is planning to retire on February 28th of this year to Castel Gandolfo, the grand historical papal summer palace, located in a small town of Castello about 15 miles southeast of Rome while he waits for his permanent Vatican apartments to be made ready.

Castello is a small town of just over 8,000 citizens perched above Lake Albano and is considered by many world travelers one of the most beautiful small cities in Italy. 

As you might guess, many of the small town’s residents serve in and/or work at the papal establishment that commands the heights above the lake. The religious property include 2 palaces (Papal and Barberini), apartment housing for 21 inhouse servants, an electrical plant, star observatory (Galileo would be happy), professional offices, farm buildings and animal stables.

Also contained in the complex are buildings in the Villa Cybo, set aside for the religious community of the Maestre Pie Filippini and their school, and two cloistered convents, housing the Poor Clare and Basilian Nuns.

So the Pope, as you can see, will not be exactly alone. As a world leader, many people, despite his stated desire to maintain a private life of quiet prayer, will want to seek his counsel and advice.

After meeting with the Pope, his many future visitors will not be left without aid and comfort for in Castello there is a remarkable restaurant that has been offering hospitality since 1882: The Ristorante Pagnanelli. 

This legendary restaurant is located next door to the Pope’s own villa and is now run by the fourth generation of the Giovanni Pagnanelli Family. Today Aurelio Mariani and his wife Jane along with their four sons continue a tradition that includes both heritage and innovation.  

 

And if, success is declared by how the rich and famous come quietly to dine on the remarkable cuisine here, than Pagnanelli can be very proud indeed of their guest list.

Besides the many heads of state and princes of the church that have confidentially booked a balcony table overlooking the Lake, such thoughtful artists as Daniel Day Lewis and Robert De Niro have greatly enjoyed dining here.

The view and the proximity to the Papal Estates certainly are attractions. But what may additionally draw guests to the Pagnanelli dining room is their culinary philosophy, which rests on two cardinal points.

First, every ingredient must be outstanding and purchased whenever possible from local farmers and producers, not to mention those sourced from the family’s own farms. Pagnanelli also changes their menu monthly to flow and connect with the seasons. 

Second, while honoring Italian culinary history, they are not afraid to seek innovation combinations, such as Ostriche Fin de Clair e Ostriche Noblesse and La Nassa dei Crostacei con Aragosta, Astice, Scampi e Mazzancolle. (Diners' Alert: the menu is only available in Italian). 

In short, this remarkable restaurant have endured, high on a mountain top, for over 100 years by never fearing the new while also respecting past traditions.

Perhaps this wise blend of both the tested and the innovative is a wise theme for the College of Cardinals in nearby Rome to consider as they seek to pick a new pope for the 21st Century.

It’s a philosophy that any wise chef knows will enable his restaurant to grow and to be part of modern life. This same philosophy of the old and the new could also guide and strengthen the contemporary church. Let us hope the Cardinals come to understand the feast that both life and spirituality can and should offer to all.

Vatican spokesman have revealed to the world’s waiting press that the final residence of Rome’s retiring Pope will be the Convent of Mater Ecclesiae – minus the good Sisters of the Community of the Visitation. The 20 year old four story building and gardens are central located right behind St Peter’s grand Basilica.

It will contain a complete home residence as well as contemporary chapel, kitchen gardens and a roof terrace overlooking Rome itself. Benedict, once dubbed the "Prada Pope" for his fondness for fine red designer loafers and haute-couture crafted vestments, directed that customized renovation on the Convent begin in November of last year.

While it is unknown what activities the Pope is planning to address in his retirement, it is well known he likes to stroll in sunny gardens. At Mater Ecclesiae he will have a chance to see the eggplant, zucchini and other vegetables planted by the Sister in the Convent's vegetable garden prior to their gracious departure. 

Nearby are also Spanish orange and lemon trees, whose fruit has been used in making the Vatican's legendary maria marmalade. One can only wonder if this Pope, who left before death's deadline, will ponder the complex nature of his legacy as he breakfasts on tea and toast high in his secluded garden world.

Of interest to Vatican watchers was the information released today that the charming Monsignor Georg Gaenswein, the Pope's devoted private secretary, will remain his holiness' aide, residing with him at the renovated Convent of Mater Ecclesiae on the Vatican grounds. 

Eyebrows were, however, raised when it was also announced that Monsignor Gaenswein will also serve as Perfect of the new pope's household.

This position has long been regarded as that of gatekeeper as the Perfect maintains the pope's calendar and so controls who has access to the papal throne.

One can only wonder if the new pope will also be a fan of 'marmalade' or if he is allowed to prefer a different 'jam'.

When Coffee Becomes Art 

Many years ago, while in a small Italian cafe, I had a cup of coffee so delicious I had, like a tourist, to ask the name. With a smile, the waiter soon brought a small silver can to my table, enscribed with bold red lettering, labeled "Illy".

It has been my favorite coffee ever since. To my delight, this fine coffee is now enjoyed around the world. For you see, Illy has made enjoying a cup of coffee as memorable as this elegant ad aired in Hong Kong.
